Katz knives are a brand of knives developed by Keith Derkatz in 1991. The knives are made to his exact specifications in Japan to high tolerances and are of a very high standard. Keiths Katz knives include a number of different types. These include the likes of hunting knives, lockback knives, folders, money clip knives, fixed blade knives as well as various lines known as the Lion king series, the Cheetah series, the Wild Kat series and even the Black Kat series etc. They use such steels as XT-80 and XT70 stainless steel. The XT80 hits between 58-59 on the Rockwell hardness rating and the XT70 hits 54-55 on the Rockwell hardness rating. They also use materials like Cherry wood and Black Kraton and have basically made plenty of knives to meet the needs of most people, so there is something for everyone.
